--The following items were not date marked and were prepared 48 hrs ago: In the walk in cooler pinto beans, Spanish rice, chicken stock, queso, cooked chicken, oxtail, flan, chili relleno.
COS- All items were date marked, education was given verbally and with handouts. In the make table the following food was not date marked: thawed chicken nuggets, thawed corn dogs. COS- The items were date marked for 48hrs ago.
--The dishwasher handled dirty dishes and then grabbed the clean dishes to put them away.
COS- The employee re-washed the dishes and his hands. The PIC gave him training.

--In the hand wash station was a clean food container.
COS- The employee moved the container so that we may wash our hands.
--The cold holding unit is down, food is being held on ice. In the top of the make table the following were out of temperature: enchilada sauce 75F, cheddar cheese 46F, pico 50F. All food was placed in the cooler at 10:00AM. Educated employees to submerge the food in ice on bottom and up the sides to maintain 41F or less. Food was placed inside the cooler.

Inspector Comments
--On the make table there were flies landing on the sliced cheese.
COS- The cheese was voluntarily discarded, and the employee covered up all the food.
--The back door of the kitchen was propped open, letting flies into the kitchen. They do not have a screen.
COS- The PIC closed the back door.
On the make table with the uncovered food were nine flies landing on the bottles and the make table around the food. Many flies were in the front of the establishment.
