Bella Sol Bistro in Lindsborg changes hands as chef retires

LINDSBORG, Kan. — Bella Sol Bistro, a popular downtown restaurant known for its tacos, Monte Cristo sandwiches and burgers, has transitioned to new ownership after Chef Rodney Goodwin announced his retirement from the food service industry.

The bistro, which Goodwin operated since March 2024, changed hands July 1 when an experienced couple took over the restaurant space. Goodwin cited the physical demands of running the establishment as his primary reason for stepping away.

"Physically it's too much for me," Goodwin said in a social media post to customers. "I have decided to retire from food service and the chef's world."

The restaurant gained a loyal following during Goodwin's tenure, with the establishment running out of food due to high demand on the last day of operation.

"We had to close early — ran out of food!" Goodwin posted.

Goodwin described Bella Sol Bistro as his "swan song" in the culinary world and expressed gratitude for the community's support over the 16-month run.

"It's been such an honor and privilege to serve and chef for all of the patrons who dined with us since March of 2024," he said. "To be a small part of your life in some way, even if it was just dinner or lunch."

The retiring chef plans to pursue a music career and other personal interests he had put on hold during his time in the restaurant industry. He has also floated the possibility of operating a food truck in the Lindsborg, Salina and McPherson areas, potentially offering weekend service featuring his signature dishes.

The new owners have not yet announced their plans for the restaurant or potential menu changes. The bistro is located at 101 N. Main St.

Goodwin thanked patrons for their loyalty and encouraged them to support the new management as Bella Sol Bistro begins its next chapter.
