Educated on 2 stage cooling parameters. 3-501.17(A) In the reach in cooler located in the kitchen was 9 plastic bags of noodles with no date marking. PIC stated they were made Saturday. COS. PIC date marked appropriately. 3-501.16(A)(2) Next to the breading in the kitchen was a metal container of milk wash 79F. PIC stated it was put there this morning. PIC discarded milk wash and made more and placed on ice. 3-501.17(B) In the reach in refrigerator in the kitchen was an opened container of heavy whipping cream with no date mark. PIC stated it was opened Saturday. COS. PIC date marked appropriately. 7-102.11 In the register area hanging on the handwashing sink was a clear spray bottle with a clear liquid with no content marking. PIC stated it was sanitizer. COS.
